Invert sugar

500g caster sugar
250ml water
5 g citric acid
1/2 teaspoon bicarbonate of soda

In a big pan, mix sugar, water and citric acid, stir until sugar is melted and liquid is heated to 70-80c celsius. Keep that temperature for 1,5-2 hrs. Stir eventually. I used a regular food thermometer to keep the temperature constant.
After max. 2hrs, remove pan from heat, add the bicarbonate, huge foam will build, this is why your pan needs to be big enough. After a few minutes, the foam will dissapear again. The bicarbonate actually neutralizes the acid. Fill the hot invert sugar in a bottle, close firmly.
